About Us

At Manchamanteles, we honor the depth and discipline of Mexican cuisine through fire, memory, and modern refinement.

 

Mole Manchamanteles (mahn-chah-mahn-TEH-les), meaning “tablecloth stainer,” reflects the richness at the heart of our tradition—layered, complex, and built on contrast: sweet and savory, smoke and spice, history and evolution.

 

Our kitchen is guided by cocina de humo, where mesquite and oak meet the Aztec grill. Through radiant heat, conduction, and high-velocity flame, we build flavor with intention—deeply rooted in technique, elevated in execution.

 

The menu highlights prime Black Angus, ABF chicken, handmade corn tortillas, seasonal Mexican specialties, and our signature moles rojo and negro—each crafted with respect for origin and time.

 

This is Mexican cuisine, reinterpreted with precision and restraint. Designed for celebration, and meant to be remembered.
