7 Moles

del Universo

By Chef Geno Bahena

This March, I share my signature seven-course tasting menu—an intimate journey through Mexico’s regions, colors, and emotions told through its most iconic culinary tradition.

Each course tells a story—seven moles,

each a reflection of Mexico’s soul. From the dark mystique of Mole Negro to the ethereal Mole Blanco, every bite is memory, craft, and emotion.

About Us

"Mole Manchamanteles" is pronounced as "mahn-chah-mahn-TEH-les" in Spanish. It is essentially one of Mexico’s national dishes, known for its unique combination of sweet and savory flavors. The term translates to "tablecloth-Stainer" in English, alluding to its intense nature and potential to stain tablecloths due to its rich mixture of ingredients.

"Cocina de Humo-al carbon or char coals" refers to the culinary technique of cooking and preserving food using smoke produced by the combustion of mesquite and oak in a wood-burning grill. This process imparts a unique flavor, aroma, and color to the food.

The Aztec grill gives you three kinds of cooking heat: Radiant Heat, Conducted Heat & High-Velocity Hot Air.

Our menu consists of Black Angus Steak Cuts, ABF Chicken, Seasonal and Regional Mexican Specialties, Mole Rojo and Negro, Home made corn tortillas, to seduce all your senses. We bring all the flavors of Mexico to you. Perfect for special occasions!

“The best dining experience I have ever had. I tried the manchamaneles pollo and the enchiladas potosinas. I will be back for sure. Great job with the updated decor and ambiance. It's nice to have a date spot for mexican food in the Bucktown area."
